3 tbs Moroccan Mint Green Tea
2 tbs organic lavender flowers
1L boiling water
80g organic raw sugar
2 lemons, 1 juiced and 1 sliced
4 star anise
1L soda water
1 cucumber, sliced
Handful of fresh mint leaves
Ice cubes

Combine the tea, lavender and boiling water in a jug and leave to stand for 5-10 minutes. Meanwhile, toast the star anise in a hot frying pan, 2-3 minutes until fragrant. Strain the tea and add the star anise, sugar and lemon juice then stir to dissolve sugar. Allow to cool and place in the fridge until cold.
1To serve, place cucumber, lemon slices, mint leaves and ice cubes in jug or glasses. Half fill with the iced tea and top up with the soda water. Serve.
